I have some friends coming for dinner and one of the courses is a tomato and roasted red pepper soup with a cheese straw. I have been lazy lately and have been buying cheese straws at the bakery. I dug out an old recipe, not even sure who gave it to me. The tender little straws came out great without a whole lot of effort so I want to share it.
This made about 60 cheese straws.
Preheat the oven to 375 degrees
2 cups unbleached flour
1/2 cup of whole wheat flour
1 1/2 sticks very cold butter, cut into pieces. I use unsalted butter
1/2 pound cold cream cheese
1 tsp salt
5 tablespoons of ice water
In the food processor add both types of flour, salt, butter, and cream cheese. Pulse until mixture resembles coarse meal. Now add the ice while the motor is running, just until the dough forms a ball. Halve the dough and flatten to form 2 squares . Wrap in plastic wrap and chill at least 1 hour.
2 large eggs, lightly beaten plus on tablespoon of milk or cream
